Easter Pancakes with Strawberry Honey

 

Ingredients:

(Makes 2 smaller bunnies or 1 large bunny)

  • 2 ripe bananas
  • 2 large eggs
  • 1/2 cup coconut flour
  • 1/4 cup tapioca flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/4 cup milk of your choice (cows, almond, coconut, etc.)
  • 1 tablespoon coconut oil for cooking
  • Toppings: Melita Strawberry Honey, fresh strawberries, banana, ice cream

 

Instructions:

  1. Mash the ripe bananas in a mixing bowl until they are smooth and creamy.
    Add in the two large eggs and mix until they are fully combined with the bananas.

  2. Add coconut flour, tapioca flour, baking powder, and salt until they are well combined. Add the milk to the mixture, stirring constantly until the batter is smooth and no lumps remain. (Option: Blend all ingredients together in a blender for a smoother consistency.) 

  3. Heat a large pan over medium heat and melt some coconut oil in the pan.

  4. Pour the batter into the pan in the desired shapes. 

  5. Cook each pancake for about 2-3 minutes on each side, or until they are golden brown and cooked through.

  6. Serve hot with your toppings - get as creative as you like!
